This style of chorizo is halfway between a cooking chorizo and a cured one; this means that it can work well in a number of different recipes, or eaten on its own, but sliced more thickly than you would a fully cured chorizo.

This salami is safe to be kept at ambient temperatures. However, we have found that the best way to preserve the high quality is to wrap it tightly in cling film, freezer bag, or similar airtight wrapping, and store it in the fridge.
