Dry Aged and butchered by Luke at Meat Box this pork is Luke own herd of old fashioned English breed the British Saddleback. Now on the Rare Breed Survival Trust's 'Watch List' the Saddleback is known to be a very hardy breed well suited to an extensive outdoor life.
This mild-flavoured, lean cut is wrapped in a good layer of fat which bastes the meat whilst cooking, keeping it juicy and tender, and produces an outstanding crackling. Smother in a herby marinade or stuff with fresh sage, pine nuts and onion to keep the joint extra moist whilst roasting.
All of our pork comes from local free-range pigs. We take our pigs to our trusted abattoir and butchers, who only dispatch a small number of pigs each week to the keep stress level of the animal as minimal as possible.
Serving suggestion: Allow 200g - 250g per person

Keep in original packaging & refrigerate. Remove from packaging & rest at room temperature before cooking.
